This baked pumpkin oatmeal combines classic fall spices with creamy pumpkin and oats for a hearty, make-ahead breakfast. Simply mix, bake, and serve warm with milk or cut into portable squares. Leftovers keep well for quick reheating.

  1. Set your oven to 350°F.
  2. Use a bit of extra butter to coat an 8x8-inch baking dish.
  3. In a large bowl, combine the oats, brown sugar, baking powder, salt, and all spices. Mix well. Then add the egg, milk, melted butter, and pumpkin puree, stirring until everything is thoroughly blended. Transfer the mixture to the prepared dish and spread it out evenly.
  4. Bake for 25 to 27 minutes, until the top is golden and a toothpick inserted in the center comes out clean.
  5. Allow it to cool a bit before serving. You can enjoy it warm with milk drizzled on top, or cut into squares as we do for our twins. Store any leftovers covered, and eat them at room temperature or reheated.
