Ingredients
Directions
- Heat oven to 350°F. In a big bowl, combine flour, baking powder, and salt; set aside.
- In another large bowl, use an electric mixer on medium speed to cream together sugar and softened butter until the mixture is light and airy.
- Mix in eggs and vanilla extract. Then slowly add the flour mixture while beating on low speed, mixing thoroughly. Stir in the melted unsweetened chocolate until well incorporated.
- On a lightly floured surface, roll the dough to a thickness of 1/8 inch. Use a 2 1/2-inch round cutter to create circles. Arrange them 2 inches apart on ungreased cookie sheets.
- Bake for 10 to 12 minutes until the cookies are firm. Let them rest on the baking sheets for 1 minute, then transfer to wire racks to cool completely.
- Mix 1/2 teaspoon of black food coloring into the chocolate frosting to turn it black. Spread this frosting over the cooled cookies. To make them look like cat faces, place miniature candy-coated chocolate pieces for eyes, jelly beans for the nose, gum drops for the mouth, string licorice for whiskers, and pieces of chocolate wafer cookies for ears.
