Cake Mix Pumpkin Muffins

These easy pumpkin muffins start with a box of yellow cake mix and canned pumpkin, plus warm spices. Simply mix, fill muffin cups, and bake for a quick fall treat. Optional brown sugar topping adds a sweet crunch.

- In a mixing bowl, combine the yellow cake mix, canned pumpkin, pumpkin pie spice, and cinnamon. Beat with an electric mixer until well blended.
- Prepare a muffin tin by lining it with parchment paper liners (they prevent sticking) or by spraying regular liners with nonstick cooking spray.
- Divide the batter evenly among the 12 muffin cups.
- If desired, sprinkle the tops of the batter with brown sugar.
- Bake at 350°F for 22 to 25 minutes, or until a toothpick inserted into the center comes out clean.
