These candy corn cookies are a perfect Halloween dessert, blending buttery sugar cookie dough with sweet candy corn. The dough comes together quickly and bakes into soft, chewy cookies with a pop of color from the candy. They're sure to be a hit at any autumn gathering.

Directions
- Set your oven to 350°F (175°C) and prepare baking sheets by lining them with parchment paper.
- Combine the flour, baking soda, and salt in a medium-sized bowl using a whisk.
- Using a large bowl, beat the butter and sugar together until the mixture becomes light and fluffy. Then add the egg and vanilla extract and mix well.
- Slowly incorporate the dry flour mixture into the butter mixture, stirring just until everything is combined. Gently fold in the candy corn.
- Place rounded tablespoon-sized portions of dough onto the lined baking sheets, leaving about 2 inches between each cookie.
- Bake for 10 to 12 minutes, or until the edges turn a light golden color. Allow the cookies to rest on the baking sheets for 5 minutes before moving them to wire racks to finish cooling.
