This hearty chili features ground turkey, sweet potatoes, and apples simmered in a smoky chipotle-tomato broth. It's seasoned with warm spices and finished with a splash of cider vinegar and fresh cilantro. Serve it with sharp cheddar and crunchy toppings for a perfect fall meal.

- Heat the olive oil in a large soup pot over medium heat. Add the ground turkey and chopped onion, season with a pinch of salt and a few grinds of black pepper. Cook, using a wooden spoon to break the meat into small pieces, until it's no longer pink. Drain off any excess fat, then return the meat to the pot. Stir in the minced garlic, cinnamon, coriander, cumin, and paprika, cooking for about a minute until fragrant.
- Add the minced chipotle pepper and the teaspoon of adobo sauce, along with the can of diced tomatoes and 1 cup of water. Stir in the diced sweet potatoes and bring the mixture to a boil. Reduce the heat to a low boil, cover the pot, and cook, stirring occasionally, until the sweet potatoes are fork-tender. Add the drained black beans and diced apple. Taste and adjust salt and pepper as needed. Continue cooking until everything is hot, then stir in the apple cider vinegar and minced cilantro.
- Serve the chili right away, topped with extra diced apple, additional cilantro, and any other toppings you like. Sharp cheddar cheese is especially good with the apple flavors.
