These Chocolate Monster Cookies are a fun Halloween treat that combines rich chocolate ganache with cookie sandwiches. The ganache is made by pouring hot cream over chopped chocolate, then cooled and piped onto cookies to form an open mouth. Marshmallow teeth add the perfect creepy touch.

- Coarsely chop 1 1/2 cups of chocolate (60% cacao recommended) and place in a medium heat-safe bowl.
- In a small saucepan over medium heat, bring 1 cup of heavy cream to a boil. Remove from heat immediately once boiling.
- Pour the hot cream over the chopped chocolate and let it sit undisturbed for 2-3 minutes until the chocolate softens.
- Slowly whisk the mixture until smooth, then add 2 tablespoons of unsalted butter at room temperature. Whisk until the butter is fully melted and incorporated.
- Transfer the ganache to a pastry bag, or press plastic wrap directly onto the surface and let it cool at room temperature for 2-4 hours.
- Pair cookies by size. Place the first cookie face down, pipe a thicker layer of ganache on one side, then top with the second cookie and press down only on the thick side to create an open mouth effect.
- Use extra ganache to attach candy eyes or make eyes on top of the cookies.
- Cut small teeth shapes from one jumbo marshmallow and insert them into the ganache mouth. Get creative with the tooth design.
- Store any uneaten cookies in an airtight container.
