These colorful Halloween pancakes are easy to make with a simple batter divided into four parts, three of which are tinted with green, orange, and purple food coloring. Cook them on a griddle until golden, then serve immediately for a festive breakfast or brunch.

Ingredients

Directions

  1. Combine the milk and apple cider vinegar in a bowl or measuring cup. Let it sit for 5 minutes.
  2. In a separate mixing bowl, whisk together all the dry ingredients: flour, brown sugar, pumpkin pie spice, baking powder, baking soda, and salt.
  3. After the milk mixture has rested, pour it into the dry ingredients. Add the vanilla extract and lightly beaten eggs. Stir until just combined; do not overmix.
  4. Divide the batter into four equal portions, placing each in a separate bowl.
  5. Leave one bowl plain. To the second bowl, add green food coloring and mix well. To the third, add orange food coloring and mix. To the fourth, add purple food coloring and mix.
  6. Heat a skillet over medium-low heat and lightly grease with oil or butter. Pour about 1/4 cup of batter into the skillet. Cook until bubbles form and start to pop, then flip the pancake and cook for another 30 seconds to 1 minute until done. Repeat with remaining batter, using all colors.
  7. Serve the pancakes immediately.
