These vibrant Halloween pancakes are easy to make using a basic batter divided into four portions and tinted with neon green, orange, black, and purple food coloring. Each color yields three pancakes, perfect for a fun and festive breakfast. The process is simple: mix dry and wet ingredients, color the batter, then cook on a griddle until golden.

  1. In a large mixing bowl, stir together the flour, sugar, baking powder, baking soda, and salt. In a separate medium bowl, beat the eggs, then whisk in the milk, sour cream, melted butter (cooled to room temperature), and vanilla extract. Pour the wet ingredients into the dry mixture and stir until just combined.
  2. Split the batter evenly among four bowls. Add neon green food coloring to the first bowl, orange to the second, black to the third, and purple to the fourth. Stir each until the color is uniform and as vibrant as you like.
  3. Preheat a griddle over medium-low heat (around 250°F). For each pancake, pour ¼ cup of colored batter onto the hot surface. Cook until bubbles start to form and pop, then flip. Continue cooking for about one more minute until the other side is golden. Repeat with remaining batter; you should end up with three pancakes per color. Serve warm.
