These easy pumpkin cakes are perfect for Halloween. Topped with a classic spider web icing design, they're both delicious and festive. Optional printable toppers add extra fun.
Ingredients
Directions
- Preheat your oven to 180°C (350°F, gas mark 4).
- Cook the pumpkin in a microwave until it becomes soft. If there is excess liquid, drain it off before adding to the batter.
- In a bowl, combine the flour, sugar, salt, cinnamon (and optionally a pinch of nutmeg and mixed spice), and baking powder. Then add the beaten eggs, oil, and finally the cooled cooked pumpkin. Stir until well blended.
- Fill a floured cake pan or individual cupcake liners with the batter. Bake for 25 minutes.
- Allow the cakes to cool completely. Prepare a simple glace icing by mixing icing sugar with milk or water. Divide the icing and tint a portion with orange food coloring for the web design.
- Ice one cake at a time with the white icing. Pipe concentric orange rings on top, then drag a cocktail stick from the center to the outer edge repeatedly to create a spider web pattern.
- For optional decorations, cut out Halloween-themed designs from cardstock, attach them to cocktail sticks, and stick them into the cakes as toppers.
