These pumpkin muffins blend pure pumpkin purée, applesauce, and olive oil for a tender crumb. After whisking the wet ingredients, fold in the flours and spices until just combined. Bake at 350°F for 25 to 30 minutes and optionally garnish with rolled oats and pumpkin seeds.

  1. Set your oven to 350°F. Lightly coat muffin tins with nonstick cooking spray.
  2. In a large bowl, whisk together the pumpkin purée, oil, applesauce, eggs, and granulated sugar until smooth. Sprinkle the pumpkin pie spice, baking powder, baking soda, and salt over the mixture, then whisk again to combine. Add both flours and gently fold with a spatula or spoon just until no dry streaks remain; the batter will be thick and slightly lumpy.
  3. Evenly divide the batter among the prepared muffin cups. If desired, sprinkle rolled oats and pumpkin seeds on top. Bake for 25 to 30 minutes, until a toothpick inserted in the center comes out clean. Let the muffins cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
