These cookies capture the essence of autumn with a blend of warm spices and reduced apple cider. A simple cinnamon glaze adds sweetness and a pretty finish. They're best enjoyed within a couple of days due to their moist texture.

- In a small saucepan, pour 1 and 3/4 cups of apple cider. Bring it to a boil over medium heat while stirring now and then. Lower the heat to a simmer and continue stirring occasionally until the liquid reduces to about half a cup. Set it aside to cool.
- Set your oven to 375°F. Cover two baking sheets with parchment paper or silicone baking mats.
- Using a stand mixer with the paddle attachment (or a hand mixer and a large bowl), beat the softened butter, brown sugar, and granulated sugar until the mixture becomes light and fluffy. Add the reduced cider, buttermilk, and egg, mixing until incorporated.
- In another bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and allspice. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
- Drop rounded tablespoons of dough (or use a small cookie scoop) onto the prepared sheets, spacing them about 2 inches apart. Bake for 9 to 11 minutes, until the edges turn a light golden brown. Let the cookies rest on the sheets for 1 minute, then transfer to a wire rack to cool completely.
- For the glaze, whisk together the powdered sugar and cinnamon in a small bowl. Gradually whisk in the reduced cider until you achieve a drizzling consistency. Drizzle the glaze over the fully cooled cookies and allow it to set.
- Keep the cookies in an airtight container. They are very moist and will only stay fresh for a couple of days.
