These Halloween ice cream sandwiches are a treat to make and eat. Just assemble two cookies with ice cream, roll the edges in spooky sprinkles, and chill until firm. Customize with your favorite cookie and ice cream flavors for a festive dessert.

- Place two cookies bottom-side up next to each other.
- Put about one and a half scoops of ice cream on one cookie, add any extra toppings or sauce, then top with the second cookie and press gently until the ice cream spreads to the edges.
- Spread Halloween sprinkles on a small plate, then roll the exposed ice cream edge of the sandwich through the sprinkles until coated.
- Wrap each sandwich in parchment paper or plastic wrap and refrigerate for at least 20–30 minutes to allow them to firm up.
