Halloween Monster Cookies

These Halloween Monster Cookies start with a vanilla cake mix base, dyed in three colors and rolled in sugar. After baking, they're decorated with candy eyeballs for a fun, creepy treat.

- Heat the oven to 350°F. Line two large baking sheets with parchment. In a large bowl, mix the cake mix, melted butter, eggs, powdered sugar, and vanilla until well combined.
- Split the dough into three separate bowls and tint each with a different food coloring (green, blue, and pink work well). Roll the dough into tablespoon-sized balls, then coat each ball in granulated sugar.
- Place the cookie balls about 2 inches apart on the prepared baking sheets. Bake until the tops are cracked and look set, about 10 to 12 minutes.
- While the cookies are still warm, press candy eyeballs into them. Let the cookies cool completely before serving.
