Halloween Pudding Cups Recipe

These Halloween Pudding Cups use hollowed-out mandarins as edible bowls filled with creamy pudding. Top with a mint leaf stem and paint on jack-o-lantern faces for a festive dessert. The leftover mandarin flesh can be used for juice or jam.

- Using a sharp paring knife, slice off the top half inch of each mandarin. With a small spoon or melon baller, remove the mandarin flesh. Save the flesh for juice, fruit salads, or jam.
- Prepare the pudding mix as directed on the package. Allow it to cool slightly, then pour it into the hollowed mandarin cups. Refrigerate until set.
- When ready to serve, make a small hole where the stem was on each mandarin. Insert one mint leaf to create a pumpkin "stem."
- To decorate, use a small paintbrush and black gel food coloring to paint jack-o-lantern faces on the mandarin skin. Ensure the skin is completely dry and free of condensation, otherwise the face will bleed.
