Halloween S'mores with Homemade Marshmallows

These Halloween S'mores feature homemade marshmallows that you can cut into ghost shapes. The marshmallows are made from scratch with gelatin, sugar, and vanilla, then left to set overnight. Assemble them with graham crackers and chocolate for a festive treat.

- Pour the unflavored gelatin and water into the bowl of a stand mixer and let it sit.
- In a small saucepan, combine the granulated sugar and water. Cover with a lid and bring to a boil. Let it boil for 3 minutes, then take off the lid. Clip a candy thermometer to the side of the pan and continue boiling without stirring until the syrup reaches 240°F.
- With the mixer on medium speed, slowly pour the hot syrup into the gelatin mixture in a steady stream. Beat until the syrup is fully incorporated.
- Turn the mixer to high speed and add the salt. Continue beating for 8 to 12 minutes, until the mixture is lukewarm and resembles marshmallow fluff. Then mix in the vanilla.
- Working quickly, spread the marshmallow mixture into a 13x9-inch pan lined with parchment paper that has been lightly sprayed with cooking spray.
- Allow the marshmallows to cool, then cover the pan loosely and let them sit on the counter overnight.
- Dip a cookie cutter into powdered sugar and cut out marshmallow shapes. Lightly dust the cut marshmallows with more powdered sugar. For ghost shapes, press two mini chocolate chips into each for eyes.
- Assemble your Halloween S'mores by sandwiching a piece of chocolate bar and a homemade marshmallow between two graham crackers.
