Ingredients
Directions
- Preheat your oven to 350°F. Lightly coat a 14-inch pizza pan with cooking spray.
- In a medium bowl, whisk together 2 cups all-purpose flour, 2 teaspoons cornstarch, 1 teaspoon baking soda, and 1 teaspoon salt. Set aside.
- In a large bowl or the bowl of a stand mixer fitted with the paddle attachment, cream together 3/4 cups unsalted butter (room temperature), 3/4 cups packed light brown sugar, and 1/4 cup granulated sugar until light and fluffy, about 2-3 minutes. Add 1 large egg (room temperature) and 2 teaspoons vanilla extract, mixing until combined. Scrape down the sides of the bowl.
- With the mixer on low speed, gradually add the dry ingredients and mix until incorporated. Then, still on low, add 1 cup mini semi-sweet chocolate chips and 1/4 cup sprinkle mix, mixing just until combined.
- Transfer the cookie dough to the prepared pizza pan. Using a spatula or your hands, flatten the dough so it barely reaches the edges (the dough will spread during baking). Ensure your pan is large enough to prevent overflow; alternatively, you can use a deep dish pan.
- Bake for 20-24 minutes, or until the cookie cake is lightly browned. Allow it to cool completely before decorating.
