These easy sugar cookie bars are perfect for Halloween parties. The dough is pressed into a sheet pan, baked until golden, then frosted with a homemade almond-flavored icing and decorated with festive sprinkles. They can be prepared a day in advance and stored in an airtight container.

  1. Grease a standard rimmed baking sheet (about 12x17 inches) and set it aside.
  2. Cream together the softened butter and sugar on medium speed. Add eggs one at a time, beating well after each addition. Scrape down the bowl, then mix in the vanilla until combined.
  3. In a separate bowl, whisk together the salt, baking soda, and flour. Gradually add this dry mixture to the butter-sugar mixture, mixing just until combined.
  4. Press the dough evenly into the prepared baking sheet. Bake at 375°F for 15 minutes, or until the edges are lightly golden. Remove from the oven and allow to cool completely.
  5. For the frosting, beat the softened butter with an electric mixer until smooth. Add 2 tablespoons of milk, a small drop of orange food coloring, and the almond extract; mix well.
  6. Gradually add the powdered sugar, about half a cup at a time, to avoid a mess. Stir in the remaining 1 tablespoon of milk and blend until smooth. Add more food coloring if a darker shade is desired.
  7. Frost the cooled cookie bars and immediately sprinkle with Halloween sprinkles. Cut into 36 to 40 bars. Store in an airtight container; these can be made a day ahead and served the next day.
