- In a large mixing bowl, combine the melted butter, brown sugar, white sugar, pumpkin puree, vanilla extract, and eggs. Whisk until smooth.
- Add the baking soda, all-purpose flour, and pumpkin spice to the bowl. Stir until just combined. The dough will be sticky.
- Gently fold in the semi-sweet chocolate chips, taking care not to overmix.
- Cover the bowl with plastic wrap and place in the freezer for 20 to 30 minutes, until the dough firms up slightly.
- About 5 minutes before removing the dough from the freezer, preheat the oven to 350°F and line a baking sheet with parchment paper.
- Scoop the dough into even balls about 2 inches in diameter, placing them 2 inches apart on the prepared baking sheet. They don't need to be perfectly round.
- Bake for 13 to 15 minutes, until the edges are golden brown.
- Transfer the cookies to a wire cooling rack, allow to cool, then serve and enjoy.
