Making pumpkin purée from scratch is easier than you think. Start with a small sugar pumpkin, roast it until tender, then blend the flesh. Use it in pies, soups, or any recipe calling for canned pumpkin.

Directions
- Set your oven to 375°F.
- Slice the sugar pumpkin in two and remove the seeds and strings.
- Arrange the halves face down on a rimmed baking sheet and bake for 45 to 60 minutes, until the pumpkin is soft.
- Spoon the cooked flesh from the skins and blend in a food processor or blender until smooth.
