- Slice the lid from a 10- to 15-pound pumpkin and remove the seeds. Place them in a colander and rinse under running water to clear away the pulp. Spread the seeds on paper towels, pat them dry, and allow them to rest for 30 minutes to eliminate extra moisture, yielding roughly 1 cup of seeds.
- Preheat your air fryer to 350°F. In a medium bowl, combine the dried seeds with 1 teaspoon olive oil, 1/4 teaspoon ground chipotle pepper, 1/4 teaspoon kosher salt, and 1/8 teaspoon cayenne pepper. Mix everything until the seeds are evenly coated.
