These Kiss from a Vampire Cookies are tender jam-filled rounds with two tiny bite marks on top. The dough is chilled then baked at 325°F until set, and you can accentuate the vampire bites with a drizzle of extra jam. They're a creepy-cute treat for any Halloween gathering.

  1. In a large mixing bowl, beat the softened butter and sugar together until light and fluffy, about 5 to 7 minutes. Mix in the egg and vanilla extract. In a separate bowl, whisk the flour and salt, then gradually add to the butter mixture, blending well. Shape the dough into a flat disk, wrap it, and chill in the refrigerator for 30 minutes.
  2. Preheat your oven to 325°F. On a surface dusted with flour, roll out the dough to a thickness of 1/8 inch. Use a floured 2-inch round cookie cutter to cut out circles.
  3. Place half of the circles onto greased baking sheets. Spoon 1 teaspoon of seedless strawberry jam into the center of each. Top with the remaining circles and gently press the edges to seal. Using a skewer, poke two small holes on top of each cookie to look like vampire bites.
  4. Bake for 10 to 12 minutes, until the cookies are set. (Note: some jam may bubble out from the tops during baking.) Let the cookies cool on the baking sheets for 5 minutes, then transfer them to wire racks to cool completely.
  5. If you like, dip a skewer into extra jam and drizzle a little from the bite holes to make the vampire marks stand out more.
