- Preheat your oven to 350°F and prepare a baking sheet by lining it with parchment paper.
- In a large mixing bowl, use a hand mixer or stand mixer with the paddle attachment to beat the butter and sugar until smooth and creamy.
- Crack the egg into the bowl, pour in the vanilla extract, and beat the mixture until fully combined. Pause to scrape down the sides of the bowl with a spatula to ensure even mixing.
- Sift the flour, baking soda, cream of tartar, salt, and cinnamon into the wet ingredients. Mix on low speed just until the dry ingredients disappear into the dough.
- Measure out 14 portions of dough using a small cookie scoop. Roll each portion into a smooth ball between your palms, then toss them in the cinnamon-sugar blend to coat. Arrange the coated balls on the prepared baking sheet, spacing them 3 inches apart.
- Bake the cookies for 10 minutes. They will look puffy and remain quite soft in the center; this is normal as they firm up while cooling. Allow the cookies to rest on the pan for 5 minutes before pressing an upside-down peanut butter cup onto the center of each one.
