These no-bake cookie dough bites feature a creamy white chocolate coating, a mini Oreo hat, and festive candy details. They're easy to make with store-bought or homemade edible dough, and the frozen centers keep them perfectly bite-sized. Perfect for Halloween parties or a fun kitchen project with kids.

  1. Using a tablespoon, scoop out 18 portions of cookie dough onto a baking sheet lined with parchment paper. Place the sheet in the freezer until the dough is very firm, which takes about 10 to 15 minutes.
  2. While the dough chills, twist apart the 9 mini Oreos and remove the cream filling (you can eat it as a treat!).
  3. Combine the white chocolate chips and coconut oil in a medium microwave-safe bowl. Heat in the microwave for 15-second intervals, stirring after each, until the mixture is melted and smooth, about 45 seconds to 1 minute total.
  4. Drop 18 spoonfuls of the ganache onto a second parchment-lined baking sheet, each about 1 inch in diameter. These will serve as the bases for the snowman bites; you will have leftover ganache.
  5. Lightly dip the smaller end of a Rolo candy into the leftover ganache, then press it onto the flat side of an Oreo half to create a hat. If using snowflake sprinkles, dip one into the ganache and attach it at the seam where the Oreo and Rolo meet. Repeat to make 18 hats.
  6. Roll each frozen dough portion into a neat ball. Use a fork to lower one ball into the ganache, coating it completely, then gently place it onto a ganache base on the baking sheet. While the coating is still soft, add two black pearl sprinkles for eyes, three to four black pearls in an arc for the mouth, and one orange pearl for the nose. Finally, set a hat on top of the snowman’s head. Repeat for all 18 dough balls.
  7. Allow the chocolate to set completely before serving, which takes about 15 to 20 minutes.
