Meringue Ghost and Pumpkins Recipe

These adorable meringue ghosts and pumpkins are a fun Halloween baking project. You'll whip up a glossy meringue, then pipe and bake half as white ghosts and half as orange pumpkins. Decorate them with googly eyes and drawn faces for a cute, festive dessert.

  1. Set your oven to 200°F and cover two baking sheets with parchment paper.
  2. Place the egg whites, cream of tartar, and salt in the bowl of a stand mixer with the whisk attachment. Start mixing at low speed and slowly ramp up to high. Once the egg whites start to foam, add the sugar one spoonful at a time. Mix in the vanilla. Continue beating on high until the mixture is glossy and forms stiff peaks.
  3. Move half the meringue into a piping bag fitted with a round tip. On one baking sheet, pipe three rows of four meringue ghosts, spacing them 1 to 2 inches apart.
  4. Stir orange food coloring gel into the remaining meringue. Pipe three rows of four pumpkin-shaped meringues on the second baking sheet, also spaced 1 to 2 inches apart.
  5. Bake the meringues for 1 hour. Then turn off the oven and let the baking sheets sit inside the closed oven for another hour. Take them out and let them cool completely.
  6. For the ghost meringues, use a small dab of melted white chocolate to attach googly eyes. For the pumpkin meringues, draw eyes and a mouth with a black food-safe marker.
