These pecan pumpkin waffles combine warm pumpkin pie spice with crunchy pecans for a delicious autumn treat. The batter is made fluffy by folding in stiffly beaten egg whites. Serve with maple syrup for a perfect breakfast.

  1. In a large bowl, whisk together the flour, brown sugar (if using), baking powder, pumpkin pie spice, and salt until well combined.
  2. Separate the eggs. Beat the egg whites until stiff peaks form. In a separate medium bowl or measuring cup, combine the buttermilk, canned pumpkin, melted butter, maple syrup, and egg yolks. Whisk until smooth, then gently fold in the beaten egg whites.
  3. Pour the wet mixture into the dry ingredients and fold together until just combined—do not overmix; a few lumps are fine. Add the chopped pecans and fold with 2 to 3 stirs.
  4. Cook the waffles in your waffle iron according to the manufacturer's instructions. For extra crispiness, place finished waffles on a wire rack in an oven set to the lowest temperature to keep them warm while you cook the rest.
