This puffed pear pancake, baked in a hot skillet, combines tender slices of ripe pear with a light egg batter. A homemade cinnamon-maple syrup adds sweet, spiced flavor, and a dusting of powdered sugar finishes it beautifully.

- Set your oven to 450°F and put a 12-inch cast iron or other oven-safe skillet inside to heat up.
- In a small bowl, combine the pear slices with the cinnamon, nutmeg, and sugar.
- In a medium bowl, beat together the eggs, flour, milk, vanilla, and salt until smooth.
- Carefully take the hot skillet out of the oven and add the butter, swirling until melted and coating the bottom.
- Layer the pear slices over the bottom of the skillet, then pour the batter over them.
- Bake for about 20 minutes, until the pancake is puffy and golden brown.
- While the pancake bakes, warm some real maple syrup and stir in any leftover cinnamon mixture from the pear bowl to create a warm cinnamon-maple syrup.
- Slice the pancake into wedges, drizzle with the cinnamon-maple syrup, and dust with powdered sugar if you like.
