- Set your oven to 350°F. Prepare a 10x15-inch jelly roll pan by greasing it, spraying with cooking spray, or lining with parchment paper. Set aside.
- In a large bowl, use an electric mixer to blend the eggs, granulated sugar, vegetable oil, and pumpkin puree until smooth and fully incorporated. Set aside.
- In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, cinnamon, nutmeg, cloves, allspice, and ginger.
- Add the dry ingredients to the pumpkin mixture and mix until just combined. Stir in 1 teaspoon of vanilla extract. Spread the batter evenly in the prepared pan. Bake for 20 to 25 minutes, or until a toothpick inserted in the center comes out clean. Let the bars cool completely in the pan on a wire rack.
- In a medium bowl, beat the softened cream cheese and butter with an electric mixer until smooth. Gradually add the sifted powdered sugar and 1 teaspoon of vanilla extract, beating until the frosting is fluffy and smooth.
- Spread the cream cheese frosting over the cooled bars. If desired, dust with a little extra cinnamon before serving.
