Ingredients
Directions
- Set your oven to 350°F and coat a 9x5-inch loaf pan with grease.
- In a medium bowl, whisk together 1 3/4 cups all-purpose flour, 1 teaspoon baking soda, 1/2 teaspoon baking powder, 1/2 teaspoon Kosher salt, and 1 tablespoon pumpkin pie spice. Set aside.
- In a large bowl, combine 1 cup pumpkin puree, 2 large eggs, 1 1/2 cups granulated sugar, 1/2 cup vegetable oil, 1 teaspoon vanilla extract, and 1/4 cup water. Mix well.
- Gradually add the dry ingredients to the wet mixture, stirring just until no streaks of flour remain.
- Pour the batter into the prepared pan and bake for 60 to 65 minutes, or until a toothpick inserted in the center comes out clean.
- Let the bread rest in the pan for 5 to 10 minutes, then transfer to a wire rack to cool completely before slicing.
