Pumpkin Cookies with Cake Mix

These easy pumpkin cookies start with a box of spice or yellow cake mix, blended with pumpkin puree and chocolate chips. The dough comes together quickly, then bakes into tender cookies perfect for fall. Cool on the pan briefly before moving to a rack.

- Set your oven to 350°F and line a baking sheet with parchment paper or a silicone baking mat.
- In a large bowl, stir together the cake mix and pumpkin puree until smooth. If you're using yellow cake mix, also add 1 tablespoon of pumpkin spice before mixing. Then fold in the chocolate chips.
- Use a large cookie scoop or two tablespoons to drop dough onto the prepared pan. Bake for 13 to 15 minutes, until a toothpick inserted in the center comes out clean.
- Let the cookies cool on the pan for 4 minutes, then transfer them to a wire rack to cool completely.
