- In a big bowl, combine 1 3/4 cups flour, 1 cup granulated sugar, 1 1/2 teaspoons pumpkin pie spice (use 2 if you prefer more spice), 1 teaspoon cinnamon, 1 teaspoon baking soda, 1 teaspoon baking powder, and 3/4 teaspoon fine sea salt. Whisk everything together.
- Add 1 cup pumpkin puree, 1/4 cup vegetable or canola oil, 1/4 cup applesauce (a 3-ounce pouch works well), 2 whisked eggs, and 1 1/2 teaspoons vanilla. Stir just until no dry streaks remain—avoid overmixing.
- Use a large cookie or ice cream scoop to divide the batter among the muffin cups, filling each about two-thirds full.
- For the crumb topping, mix 1/2 cup flour, 1/2 cup light brown sugar (a half-and-half blend is fine), 1 teaspoon pumpkin pie spice or cinnamon, and 4 tablespoons melted salted butter in a medium bowl until crumbs form. Sprinkle evenly over the muffin batter.
