This pumpkin pie French toast bake combines brioche slices with a creamy pumpkin custard and a buttery crumble topping. It's assembled the night before and baked in the morning for a stress-free holiday breakfast. Serve with maple syrup for a sweet finish.

- Coat a 13x9-inch baking dish with cooking spray. Overlap the bread slices in the dish, arranging them in a shingled pattern.
- In a big bowl, combine the pumpkin, eggs, brown sugar, pumpkin pie spice, vanilla, and salt with a whisk. Gradually add the milk and cream, whisking until the mixture is smooth. Pour this custard over the bread, then cover and chill for at least 4 hours—overnight is best (up to 12 hours).
- In a medium bowl, use a fork to mix the melted butter, brown sugar, flour, oats, pecans, and salt until crumbly. Keep this topping in the fridge until you're ready to use it.
- Heat your oven to 350°F. With clean hands, break the crumble topping into pieces and scatter it over the soaked bread.
- Bake for 35 to 40 minutes, until the topping turns golden and the custard is firm. Serve warm, with maple syrup on the side.
