- In a large bowl, cream together 1 cup brown sugar, 1 cup white sugar, and 1 cup softened unsalted butter using an electric mixer until smooth.
- Add 1 egg yolk and 2 teaspoons vanilla extract to the butter mixture and beat until well incorporated.
- In a separate bowl, whisk together 2 ¾ cups flour, 2 teaspoons pumpkin spice, 1 teaspoon cinnamon, ¾ teaspoon salt, and ¼ teaspoon baking powder.
- Gradually add the dry ingredients to the wet mixture, mixing on low speed at first, then increasing to medium until just combined.
- Fold in pumpkin chips until evenly distributed throughout the dough.
- Spray a 13x9-inch baking pan with baking spray, then spread the batter evenly into the pan.
- In a small bowl, combine 1 tablespoon white sugar, 1 tablespoon brown sugar, and ½ teaspoon cinnamon. Sprinkle this topping evenly over the batter.
- Bake at 350°F for 25 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.
