These pumpkin spice gooey bars feature a simple spice cake crust topped with a rich, creamy pumpkin filling. Baked until the edges are set and the center is slightly jiggly, they're finished with a dusting of confectioners' sugar. Perfect for autumn gatherings, they deliver all the cozy flavors of pumpkin pie in an easy bar form.

- Set your oven to 350°F. Lightly coat a 13x9-inch baking pan with cooking spray.
- In a large bowl, combine the spice cake mix, 1 egg, and melted butter using a rubber spatula until well blended. Press this mixture evenly into the bottom of the prepared pan.
- In another large bowl, beat the softened cream cheese, pumpkin puree, and remaining butter until smooth. Add the remaining 2 eggs and vanilla, whisking until fully incorporated. Then whisk in the confectioners' sugar and pumpkin pie spice until the batter is smooth. Pour this filling over the crust.
- Bake for 40 to 45 minutes, until the edges are set but the center still jiggles slightly. Allow the bars to cool completely in the pan.
- Dust the top with additional confectioners' sugar, then cut into squares and serve.
