These overnight oats combine the classic pumpkin spice latte taste with hearty oats and chia seeds for a breakfast that's both delicious and convenient. Simply mix the liquid ingredients, divide into jars, add oats and chia, then refrigerate. Top with yogurt and a sprinkle of pie spice before serving.

- In a large measuring cup, whisk together the milk, pumpkin puree, maple syrup, instant espresso powder, light brown sugar, vanilla extract, and pumpkin pie spice. Evenly pour this mixture into four 12-ounce jars or airtight containers.
- Into each container, stir ½ cup of the old-fashioned rolled oats and 2 teaspoons of chia seeds, making sure the oats are fully submerged. Cover the containers and refrigerate for at least 4 hours, or up to 3 days.
- When ready to serve, spoon a dollop of vanilla Greek yogurt over the oats in each jar. Sprinkle with additional pumpkin pie spice if desired, and enjoy chilled.
