These pumpkin waffles are easy to make with a simple batter of pumpkin puree, milk, eggs, and warm spices. Cook them in a waffle iron until golden, then serve with butter, syrup, and whipped cream for a delicious autumn treat.

Ingredients

Directions

  1. Get ready by heating your waffle iron to medium (around level 3 or 4). If you're not eating the waffles right away, preheat your oven to 175°F to keep them warm.
  2. In a large bowl, combine 1 cup pumpkin puree, 1 cup milk, 3 tablespoons sugar, 2 eggs, 1/4 cup melted butter, and 1 teaspoon vanilla extract. Whisk until smooth. Then add 1 1/4 cups all-purpose flour, 2 teaspoons baking powder, 1 1/2 teaspoons ground cinnamon, and 1 1/2 teaspoons pumpkin pie spice. Stir gently until just combined—avoid overmixing. If you like, fold in 1/2 cup chocolate chips.
  3. Pour about 1/2 cup of batter into the preheated waffle iron. Cook for roughly 2 minutes, or until the waffle iron signals it's done. Transfer cooked waffles to the warm oven if you're not serving them immediately.
  4. Serve the waffles warm with butter, syrup, and whipped cream.
