- Place butter in a large pot and melt over medium heat. Add the chopped onion and minced garlic, stirring occasionally, until they become soft and translucent, which takes about 5 minutes.
- Add the cubed pumpkin to the pot and cook for another 3 minutes, stirring to combine.
- Pour in the vegetable broth, then season with salt and black pepper. Bring the mixture to a boil, then lower the heat and let it simmer for 20 minutes, or until the pumpkin is fork-tender.
- Using an immersion blender, purée the soup directly in the pot until it is completely smooth.
- Stir in the heavy cream and warm the soup through. Taste and adjust the salt and pepper if needed. Ladle into bowls and serve hot.
