These easy pumpkin cookies require only a box of spice cake mix, canned pumpkin puree, and chocolate chips. Simply mix, scoop, and bake for a chewy fall treat that's ready in under 30 minutes.

- Heat your oven to 350°F (175°C) and line a baking sheet with parchment paper so the cookies don't stick.
- Empty the spice cake mix into a large bowl. If you're using yellow cake mix instead, stir in 1 teaspoon of pumpkin pie spice for that autumn taste.
- Add the pumpkin puree and mix until the dough is smooth and fully combined. There's no need for eggs or oil—just these three ingredients.
- Gently fold in 1 cup of chocolate chips. You can pick mini chips, milk chocolate, white chocolate, or dark chocolate—whatever you like.
- Using a cookie scoop or spoon, drop dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12 to 14 minutes, until the cookies are soft but the edges are set. They won't spread much, so they'll stay plump and chewy.
- Take the cookies out of the oven and let them cool on the baking sheet for 5 minutes, then move them to a wire rack to cool completely.
