These sourdough discard apple fritters combine tangy starter with sweet apples and a simple glaze. Fry them until golden, then finish in the oven for a perfectly cooked treat.

- Start by peeling, coring, and cutting the apples into small pieces. Toss them with lemon juice and set aside.
- In a large bowl, combine the all-purpose flour, sugar, baking powder, kosher salt, and ground cinnamon.
- Add the whole milk, beaten eggs, and vanilla extract to the dry ingredients.
- Stir everything together until a thick batter forms.
- Gently fold in the diced apples until they are evenly distributed throughout the batter.
- Heat oil in a Dutch oven to 375°F. Once hot, drop spoonfuls of batter into the oil.
- Fry the fritters for about 2–3 minutes per side, then transfer to a wire rack to drain.
- If the fritters aren't cooked through, place them in a 350°F oven for 10 minutes to finish.
- While the fritters bake, prepare the glaze by whisking powdered sugar with 2–4 tablespoons of milk until smooth.
- Once the fritters are done, dip each one in the glaze and return them to the wire rack to set.
