This recipe guides you through making a smooth pumpkin or butternut squash soup seasoned with mild curry powder. After blending the vegetables, a decorative yogurt spiral is dragged with a cocktail stick to create a spider web effect on top of each bowl.

  1. Peel the two small onions and cut them into rough chunks.
  2. Warm the olive oil in a big pot over a medium-low flame. Add the onion pieces and sauté them gently until they turn see-through.
  3. While the onions soften, remove the seeds from the pumpkin or butternut squash, strip the skin, and cut the flesh into uneven cubes. Peel the carrots and chop them roughly as well.
  4. Toss the pumpkin cubes and carrot pieces into the pot with the onions. Let everything cook together for five minutes.
  5. Sprinkle the mild curry powder over the vegetables and stir for about one minute until the aroma rises.
  6. Crush the two vegetable stock cubes into the pot. Pour in enough boiling water to barely cover the ingredients.
  7. Bring the mixture to a rolling boil, then reduce the heat and simmer for 15 to 20 minutes until the vegetables are completely tender.
  8. Use a handheld immersion blender to puree the soup until it reaches a smooth consistency.
  9. Pour the finished soup into serving bowls.
  10. Transfer the natural yogurt into a disposable piping bag or a sturdy freezer bag.
  11. Cut a small corner off the bag and squeeze out a spiral of yogurt onto the surface of each bowl.
  12. Take a cocktail stick and drag it from the center of the yogurt spiral outward to the edges to form a spider web pattern.
  13. Serve the soup right away and enjoy your spooky creation.
