Spooky Ice Cubes: A Simple Halloween Treat - Salt & Honey Catering

These spooky ice cubes are made by freezing pomegranate juice in layers, capturing candy eyeballs and berry compote inside. Perfect for Halloween parties, they add a chillingly fun touch to any beverage. The homemade compote gives a fruity burst that complements the tart juice.

  1. To create your own berry compote, toss together a cup of mixed berries (strawberries, blueberries, raspberries) with 2 tablespoons of sugar and 1 tablespoon of lemon juice in a saucepan. Cook over medium heat for around 10 minutes, stirring every so often, until the fruit softens and the mixture thickens. Allow it to cool before proceeding.
  2. Pour pomegranate juice into an ice cube tray until each compartment is about three-quarters full. Place the tray in the freezer until solid.
  3. Once the first layer is frozen, set a candy eyeball in the center of each cube. Spoon the cooled berry compote around the eyeball, filling the space.
  4. Top off each compartment with the remaining pomegranate juice, filling to the brim. Return to the freezer until completely frozen.
  5. Pop out the spooky ice cubes and drop them into your favorite drinks, punch bowl, or any beverage for a creepy-cute effect.
