This pumpkin panna cotta combines milk, cream, pumpkin puree, honey, and pumpkin pie spice for a silky, festive treat. After blooming gelatin in milk, you gently heat the mixture until dissolved, then chill for at least 6 hours until set. Serve in individual glasses for a stunning Halloween dessert.

- Pour the milk into a heavy saucepan.
- Evenly sprinkle the gelatin over the milk's surface.
- Allow it to sit for 3 to 5 minutes so the gelatin softens, then whisk.
- Over medium heat, whisk until the gelatin dissolves but the milk does not boil, about 5 minutes. Then add the cream, pumpkin puree, honey, sugar, pumpkin pie spice, and salt.
- Stir until the sugar dissolves and the mixture reaches a soft boil, about 7 minutes. Keep a close eye to prevent boiling over.
- Take the pan off the heat.
- Divide the mixture among 6 glasses, filling each halfway.
- Let cool slightly, then refrigerate until set, at least 6 hours.
