- Add a small amount of cumin and fennel seeds, along with minced ginger, ground coriander, crushed garlic, sliced green chilies, and shredded coconut to the bowl.
- Season the mixture and combine it with the roasted pumpkin until smooth. Shape the blend into small spheres the size of golf balls, press them flat, and cook each side in a pan for 3 minutes.
- Combine one measure of vinegar with two measures of water. Stir in sugar, salt, and warming spices like turmeric and cardamom.
- Bake the pumpkin pieces until they develop a caramelized exterior. Lay them out in a line on a sheet of filo pastry.
- Crumble goat cheese over the pumpkin for a tangy contrast, then top with fresh thyme or rosemary, crushed pecans, and cooked leeks.
- Fold the pastry over the filling, brushing the edges with melted butter. Bake at 200°C for 30 minutes until the crust turns golden brown.
- Cook the pumpkin seeds on a medium flame for 4 to 5 minutes. Grind them into a smooth paste, then stir in chopped chilies, garlic, fresh coriander, chives, and olive oil.
- Clean the seeds and pat them dry. Place them in an oven set to a low temperature of roughly 110°C for 10 minutes. Once dry, lightly brush them with egg white.
- Cook the seeds in a pan over gentle heat until they become crisp and golden. Sprinkle them over pumpkin gnocchi or other vegetables.
