This pumpkin bread features two batters: a classic pumpkin spice and a dark molasses-cocoa swirl. Layered and swirled, then topped with turbinado sugar for crunch, it bakes into a beautiful marbled loaf perfect for Halloween. Let it cool completely for the cleanest swirl slices.

  1. Preheat oven to 350°F. Grease a 9x5-inch loaf pan and line with parchment paper, leaving overhang for easy removal. Gather all ingredients.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and pumpkin spice (1 to 2 teaspoons). Whisk well to avoid clumps of baking soda.
  3. In a large bowl, whisk together sugar (1 cup, half white and half light brown if desired), pumpkin purée, oil, eggs, and vanilla until smooth and glossy. Ensure brown sugar dissolves completely.
  4. Add dry ingredients to wet ingredients, stirring gently until just combined—no large flour streaks. Do not overmix to avoid dense bread.
  5. Transfer about half of the batter to a smaller bowl. Stir in molasses, dark brown sugar, extra spice (pumpkin spice, cinnamon, or gingerbread spice), and cocoa powder until smooth. Cocoa is for color only, not flavor.
  6. Spread half of the dark batter evenly in the bottom of the pan. Drop half of the pumpkin batter in spoonfuls on top. Repeat with remaining dark and pumpkin batters.
  7. Using a butter knife or fork, create swirls in figure-8 or spiral motions, but do not overmix—you want distinct ribbons.
  8. Sprinkle turbinado sugar on top. Bake for 50–60 minutes. At 40 minutes, if top is browning quickly, tent with foil. Loaf is done when toothpick comes out mostly clean or with moist crumbs. Cool in pan 15 minutes, then lift out using parchment and cool on rack. Slice when mostly cool for best swirl appearance.
