These bat sugar cookies are a fun Halloween treat. The dough is flavored with cocoa, rolled thin, and baked until set. After cooling, they're topped with melted chocolate and decorated with sprinkles to make bat features.

- In a small bowl, sift together the flour, cocoa powder, and salt. Set this dry mixture aside.
- Cream the shortening and white sugar together until the mixture is light and fluffy, about 3 to 4 minutes.
- Add the milk and vanilla extract, beating until combined. Then add the egg and beat again until fully incorporated.
- Fold the dry ingredients into the wet mixture until a smooth dough forms with no streaks of flour. Wrap the dough in plastic wrap and chill for 30 minutes or up to 2 days.
- Preheat the oven to 350°F. Lay out a large sheet of parchment paper or a silicone baking mat. Also line two baking sheets with parchment paper.
- Place the dough on the parchment paper and cover with another sheet of parchment. Roll the dough out to a thickness of 1/4 inch.
- Cut out cookie shapes and place them on the prepared baking sheets about 1 inch apart. Bake for 8 to 9 minutes, until the edges look dry and set.
- Let the cookies cool on the baking sheet for 2 to 3 minutes, then transfer them to a wire rack to cool completely.
- Melt the chocolate gently in the microwave using 30-second bursts at half power. Stir after each burst until mostly melted, then stir until completely smooth.
- Spread a thin layer of melted chocolate on each cookie. Decorate the wings with Halloween sprinkles, and use two long sprinkles to create eyes.
- Let the chocolate set completely, then store the cookies in an airtight container layered with wax paper. They will keep for 3 to 4 days.
