Create these colorful frozen treats by layering sweetened coconut milk, blended pineapple, and peach puree in ice pop molds. Each layer is frozen before adding the next to create distinct bands of color and flavor.

  1. Add a few drops of liquid stevia to the coconut milk and stir until it reaches your preferred level of sweetness.
  2. Pour the sweetened coconut milk into your ice pop molds or small paper cups until they are about one-third full.
  3. Place a popsicle stick into each container and secure the top with a lid or a piece of plastic wrap.
  4. Set the molds in the freezer and leave them there until the coconut milk layer is completely solid.
  5. Combine the frozen pineapple chunks with a small amount of water in a blender, processing until the mixture becomes thick and smooth.
  6. Pour the pineapple puree over the frozen coconut milk layer, filling the molds to about two-thirds full, and return them to the freezer until firm.
  7. Blend the frozen peaches with orange juice in a blender until smooth, then pour this mixture into the molds to fill them to the top.
