These black cocoa cookies are topped with homemade marshmallow cobwebs and black sprinkles. Baked until golden on the bottom, they're a spooky treat. The sticky marshmallow strands mimic real cobwebs.

  1. Preheat your oven to 350°F.
  2. In a large bowl, combine softened butter, light brown sugar, egg, and vanilla. Mix with a spoon or electric mixer until well blended.
  3. Add all-purpose flour, black cocoa powder, baking powder, salt, and instant espresso powder (if using). Stir or beat until a thick dough forms.
  4. Using a 1.5-tablespoon scoop, portion the dough into balls and place them on two baking sheets.
  5. Bake for 11 to 13 minutes, until the cookies are set and the bottoms are golden. Allow them to cool completely.
  6. Melt the mini marshmallows in a microwave or double boiler. If using a microwave, heat in 15-second intervals, stirring each time, until smooth.
  7. Let the melted marshmallow cool until it's warm but not too hot. Grease your hands, then pull off small pieces and stretch into thin strands. Wrap these strands around each cookie to resemble cobwebs. Sprinkle with black sprinkles.
  8. Serve your spooky cobweb cookies and enjoy!
