These colorful Halloween pancakes are easy to make with a simple batter divided and tinted with food coloring. Cook them up on a griddle for a festive breakfast that's perfect for the holiday.

  1. Combine the milk and apple cider vinegar in a bowl or measuring cup. Let it sit for 5 minutes.
  2. In a large mixing bowl, whisk together the flour, brown sugar, pumpkin pie spice, baking powder, baking soda, and salt.
  3. After the milk mixture has rested, pour it into the dry ingredients. Add the vanilla extract and beaten eggs. Stir until just combined; avoid overmixing.
  4. Divide the batter into four equal portions in separate bowls.
  5. Leave one bowl plain. To the second bowl, add green food coloring and mix. To the third, add orange food coloring and mix. To the fourth, add purple food coloring and mix.
  6. Heat a skillet over medium-low heat and lightly grease with oil or butter. Pour about 1/4 cup of batter into the pan. Cook until bubbles form and start to pop, about 2 minutes.
  7. Flip the pancake and cook for another 30 seconds to 1 minute until fully cooked. Remove and set aside. Repeat with the remaining batter for all colors.
  8. Serve the pancakes immediately.
