These easy peanut butter ghost cookies start with Nutter Butter sandwich cookies dipped in melted white chocolate. Add candy eyeballs and a black icing mouth for a fun Halloween treat that sets in the fridge in just 20 minutes.

  1. Melt 6 ounces of white chocolate in a microwave-safe bowl. Heat in 30-second bursts, stirring after each, until smooth. A double boiler works too.
  2. Line a baking tray with parchment paper.
  3. Dip each Nutter Butter cookie into the melted white chocolate, covering one side fully. Let excess drip off, then place on the parchment-lined tray.
  4. While the chocolate is still soft, press two candy eyeballs onto each cookie for the ghost's eyes.
  5. When the chocolate is slightly set but still tacky, use black cookie icing to draw ghost mouths. Simple expressions work best.
  6. Refrigerate the cookies for 15–20 minutes until the chocolate is fully hardened.
  7. Arrange the ghost cookies on a platter and serve.
