This easy pumpkin chili combines lean ground beef, beans, and pumpkin puree for a rich, slightly sweet flavor. Simmered with chili seasoning and a hint of cinnamon, it's a cozy meal perfect for autumn. Serve with your favorite toppings for a satisfying dinner.

- In a large saucepan over medium heat, cook the ground beef, onion, and bell peppers together. Season with 1 1/2 teaspoons salt and black pepper. Sauté for about 10 minutes until the meat is browned and the onion softens. Drain any excess grease, then stir in 2 to 3 tablespoons of chili seasoning and cook for an additional minute.
- Add the 28-ounce can of diced tomatoes (with liquid), the rinsed kidney beans and black beans, the pumpkin puree, and 2 to 3 tablespoons of light brown sugar. If desired, add 1/8 teaspoon of ground cinnamon or pumpkin spice for extra flavor. Season with 1 teaspoon of salt and pepper to taste. For a spicier chili, add more chili seasoning. If the chili is too thick, stir in up to 1/2 cup of hot water.
- Stir everything together well, then lower the heat to a simmer. Let it cook for 30 to 60 minutes—the longer it simmers, the deeper the flavor.
- Serve the chili hot with your preferred toppings.
