These easy pumpkin muffins come together quickly with simple pantry ingredients. The batter is mixed by hand and baked until perfectly spiced and moist. Enjoy them plain or studded with chocolate chips or nuts.

- Set your oven to 375°F. Line a muffin tin with paper liners or coat with nonstick spray.
- In a large bowl, whisk together 1 ¾ cups flour, 1 cup sugar, 1 ½ teaspoons pumpkin pie spice, 1 teaspoon cinnamon, 1 teaspoon baking soda, 1 teaspoon baking powder, and ¾ teaspoon salt.
- Add 1 cup pumpkin puree, ¼ cup oil, ¼ cup applesauce, 2 whisked eggs, and 1 ½ teaspoons vanilla. Stir until just combined—avoid overmixing. Fold in optional chocolate chips or nuts if using.
- Use a large cookie scoop or ice cream scoop to fill each liner about three-quarters full.
- Bake for 20 minutes, or until a toothpick inserted in the center comes out clean. Let the muffins cool in the pan on a wire rack.
